Our Head Chef

Manabu Kanda

Our head chef has many years of accomplishments as a Japanese cuisine specialist. He is a master of Japanese food, and creates original dishes that bring out the goodness of their ingredients. His luxurious and innovative Kanazawa-style dishes are made from carefully selected local Ishikawa ingredients, and prepared using processes that make the most of their flavors.
